Soft-hearted chocolate puddings
When pierced with a spoon, the inside should spill out in a wave of molten chocolate lava. It's all in the timing, so keep an eye on these little puds for the last minute or two of cooking, and be brave when turning them out.

Philippa Sibley's divine chocolate moussey thing
Philippa and I worked together earlier this year for a dinner celebrating Epicure's 20th birthday. She made her famous take on the Snicker's bar - a sophisticated stack of dark chocolate sheets, delicate mousse and salty, caramel peanuts. It was possibly the best dessert I've ever had. Zabaglione with chocolate
These days zabaglione is flavoured with many different wines and spirits. For a very light, frothy version that's excellent as an accompaniment to poached or fresh fruit, try adding bubbly moscato or champagne. Late-picked or botrytis-type dessert wines will give a richer result, as will adding a small quantity of your favourite liqueur.

Added to salads, flowers contribute colour, texture and flavour. Many flowers retain their perfume when dehydrated and release it when hot water is added to make fragrant teas. The rose is by far the most widely used, as it is made into fragrant waters, oils, jams and vinegars; it is crystallised, candied, dried or used fresh.

Miguel Maestre's churros con chocolate
Miguel Maestre, chef at Number One Wine Bar, has signed up as an ambassador for A Taste of Harmony. Churros are sometimes referred to as the Spanish doughnut. "Churros are my favourite recipe in the world," Maestre says. "The funny thing is, in Spain we have them for breakfast but here you make them for dessert. I haven't met one person who didn't enjoy them. It's such a simple thing; simple to make and really tasty."
