Vegan Chocolate 'Ice Cream' shakes

I went right off milk when my boys were babies, but it was a long hot summer and I liked to sit outside the door with one of these frozen chocolate coconut shakes. I tried sharing them with the kids... but there was still plenty left for when my husband got home from work. :)

Ingredients: 

  • 1 tray of ice cubes
  • 1 carton of soya milk
  • 1 tin of coconut milk
  • 2 tsp cocoa powder eg Green and Blacks fairtrade organic
  • 3 tsp sugar
  • (or if the vegan issue isn't that important to you, try 4 -5 tsp Green and Blacks fairtrade organic drinking chocolate powder instead of the cocoa and sugar) 
 

Instructions:

  1. Put the ice cubes in a blender jug
  2. Add the cocoa and sugar, or drinking chocolate
  3. Pour in half a tin of coconut milk, and keep the rest in the fridge for next time (lasts a couple of days)
  4. Fill up with soya milk, up to the point where it's enough for two shakes but won't overflow the blender when it's blending.
  5. Blend. 
 
Serves 2-4
