No-Bake Chocolate Rum Cake

One of my mother's friends gave her this recipe back in the Seventies, and I would like to shake that friend by the hand! This delicious alcoholic chocolate biscuit cake has appeared at almost every fancy party or family gathering since then and quite right too!

Ingredients:

  • 1/2 lb plain chocolate
  • 1/2 lb butter
  • 2-4oz glace cherries
  • 1/2 lb Nice biscuits (or digestives)
  • 2 eggs
  • 2 dessertspoons sugar
  • 2 tablespoons rum or brandy
 

Instructions:

  1. Grease a shallow springform cake tin. 
  2. Melt the chocolate and butter.
  3. Beat up the eggs and sugar
  4.  Pour the melted chocolate and butter onto the beaten up eggs and mix.
  5. Break up the biscuites into small pieces and crumbs and mix them into the chocolate mixture.
  6. Add the chopped up cherries and finally the rum and mix together.
  7. Pour into the tin and leave to set in the fridge.
  8. When it's ready, run a knife around the edge and remove the edges of the tin and / or turn out onto a plate. (If you don't have a springform tin, let it stand in a basin of hot water for a minute first so that you can turn it out more easily, then put it back in the fridge for a short while to set).
  9. Serve with double or clotted cream
