Chocolate Fudge Ice Cream Topping

The original recipe for this came from the Silver Palate Cookbook, and quickly became a favourite in our house. We called it cement because it sets hard when poured onto ice cream.
 
 

Ingredients:

  • 4 oz plain chocolate
  • 3 tbsp unsalted butter
  • 2/3 cup water
  • 1 2/3 cups granulated sugar
  • 6 tablespoons corn syrup (if you can't find this, use golden syrup or treacle)
  • 1 tablespoon rum
 

Instructions:

  1. Melt the butter and chocolate slowly in a heavy saucepan.
  2. Boil the water, and add it to the melted chocolate and butter 
  3. Add the sugar and syrup and mix until smooth.
  4. Turn the heat up and stir until it starts to boil.
  5. Turn the heat down to keep it just at boiling point and keep it boiling without stirring for 9 minutes.
  6. Remove the sauce from the heat and cool it for 15 minutes, then stir in the rum and serve it warm.
