Planning the Right Cake for the Wedding

It's important to find out as much as you can about the wedding, and especially the catering arrangements, before you start planning the cake for it.

Some key considerations

Some of the most important things to find out include the number of guests, any special dietary requirements, the time and location of the wedding reception, and whether you can access the venue beforehand.

What I found out in this case

The number of guests was estimated at 150. At first, I had no idea how much cake to make for them, so I cut up an 8 inch test cake and found that that made 48 pieces. (What a hardship it was eating those!) From this number, I could plan the number and size of baking tins to use, and order the appropriate cake stand. As my oven is a microwave combination oven, I was very lucky that the biggest tin could just about fit in it!

Many of the guests were vegetarian Hindus from India, and we also had a fair number of English vegetarians. The recipe I had originally found included gelatine (as many shop bought cakes and desserts do), so I tried out several vegetarian alternatives - another job for the test cake.

Timing was also a concern, with several stages to the decorating. I did a trial run with the chocolate heart decorations, but in the end I thought I should have left them till the day before the wedding for the best possible quality.

One of my biggest concerns was how to get the cake to the wedding, as it was several hours' drive away and we owned a very rickety car. Thankfully, my parents were able to provide it with a smoother ride, and I bought some large tubs to stop things landing on it.

Presentation was my final concern in planning the cake. With the long car trip, and my novice cake decorating skills, I thought it best to keep it simple, so I used piping around the edges and bought some artificial roses to place around it on the table. We also needed to find a suitable figurine for the cake topper. With my brother being English and my sister in law being Indian, they bought a couple of each, cut them in half and stuck the two halves together. I think they even sold the couple made from the other halves on eBay!
