I'm not remotely a professional cook, but I've always loved baking and of course I love chocolate. So how did I come to make a chocolate wedding cake?

"Have you got any experience or qualifications in that?" a friend asked me (thanks!).

Well no, not remotely. My brother and sister bravely asked me to make chocolate cakes for their weddings. Having little idea of what was involved, I agreed to the first one and fiddled about with raspberries in between the wedding and the reception.

Aren't raspberries often out of stock and likely to drip red juice everywhere?

Yes. I don't know what I was thinking the second time round, but I made sure there would be no fruit to arrange at the reception. The result was this Chocolate Mocha Wedding Cake.

Chocolate Mocha Wedding Cake? That sounds truly fabulous.

It was a luscious cake, and the result of a long process of trial and error. There were moments of sheer panic, and it wasn't as perfect as I would have liked. But everyone seemed to like it (especially Uncle Bruce, who had 4 pieces!) and the experience of producing the cake for such a special day is something I wouldn't have missed for the world.
