Chocolate Fudge Ice Cream Topping |
The original recipe for this came from the Silver Palate Cookbook , and quickly became a favourite in our house. We called it cement because it sets hard when poured onto ice cream.
Ingredients:
- 4 oz plain chocolate
- 3 tbsp unsalted butter
- 2/3 cup water
- 1 2/3 cups granulated sugar
- 6 tablespoons corn syrup (if you can't find this, use golden syrup or treacle)
- 1 tablespoon rum
Instructions:- Melt the butter and chocolate slowly in a heavy saucepan.
- Boil the water, and add it to the melted chocolate and butter
- Add the sugar and syrup and mix until smooth.
- Turn the heat up and stir until it starts to boil.
- Turn the heat down to keep it just at boiling point and keep it boiling without stirring for 9 minutes.
- Remove the sauce from the heat and cool it for 15 minutes, then stir in the rum and serve it warm.
